Events.canada.ca - Rocky Mountain Comfort Food in the heart of Banff. Located within The Bison Courtyard, the top floor Bistro features locally grown, organic, sustainably farmed protein and produce amidst majestic mountain views. The street level General Store features the best cheeses, specialty meats and gourmet sandwiches to go in town. A second level Patio with sweeping views of the Canadian Rockies and a cozy Lounge featuring Specialty Bison Cocktails completes The Bison experience. Dinner Menu items include Daily Braised Game with Taleggio Polenta, Stewed Fennel, Smoked Tomatoes, Valley Greens, and Red Wine Jus; Cortes Island Mussels with Coconut Milk, House Red Curry, Shallots, Edamame and Peppers; and Wood Fired Gourmet Pizza with Smoked Bison, Caramelized Onions, Asparagus and Fresh Mozzarella. The Lounge menu features more casual fare, including Bison Burger & Frites with Saskatoon Berry Chutney, Bella Lodi and House Made Smoked Tomato Ketchup. Tripadvisor.com - Great food, great service. Try the Tagliatelle or the Lamb..or just about anything else, including the Onion Soup. The lunch was great too.... Concierge.fairmont.com - Attractive, contemporary-rustic décor is the ideal counterpart to Bison Mountain Bistro's fabulous Canadian cuisine. The bison burger, topped with Saskatoon berry chutney, comté and house-made smoked tomato ketchup, is scrumptious. Interesting wood-fired pizzas are a worthy choice – try one with local Valbella bacon, tomatoes, arugula and gouda. Raclette, a mountain staple, is made here with three cheeses and accompanied by smoked bison, bündnerfleisch, cornichons, baby potatoes and steamed veggies. At brunch, the Benedicts (all served on a cheese-herb biscuit) are awesome – for something more unusual, opt for the duck confit and chèvre version. The lounge is popular for pre- and post-dinner drinks, and don't miss the General Store, stocked with fine cheeses, house-made condiments and great prepared meals.
